Wow. This was such a wonderful week and weekend! We trialed heavy dairy with Evolet now that she is almost 9 months, nothing directly to her yet, but we haven’t seen anything too negative yet, hopefully this means a wider diet range again.
Wednesday my stent got removed – I can’t even begin to explain the difference that being stent free makes in my daily life. The rest of the week/weekend would not have happened if I still had the stent in. While I am so over surgeries and procedures and hospitalizations and I know there is still a kidney stone in there waiting, I’m trying to focus on feeling like myself again for the first time since May.
Thursday we went to the Minnesota State Fair with Ashley! Over 15,000 steps, Sweet Martha’s cookies, Caramel Apple and Vanilla Ice Cream, Papa Pups, Poutine, Pork Belly on a stick, Strawberry Cheesecake, Fried Pickles, Hot Dish on a stick, Strawberry Milkshake, Wild Rice Burger, Cherry CocoBerry Slushie, another Pronto Pup, Roasted Corn on the cob, 1/2 lb. Turkey sandwich.
Friday we left for the Midwest Potjie Festival! I love going, this was our first year tent camping down there, we had a blow up mattress in the car last year, but we have a baby this year, bed in the car isn’t an option. We were still a little underprepared, but it’s only our second camping experience together. We have room for improvement for next year! It was so nice getting to have a Braai again, I made Melktert and Peppermint Crisp desserts, and it was nice to get validation that they were actually well made. The Potjie was wonderful and hopefully we can make one next year! We ran out of time to make boerewors this year too, so that is going on the list for next year too. So many plans, but I love the Saffa gatherings! It was so nice to meet new people this year too!!
